Broccoli Cheddar Soup
Ingredients:
2 1/2 tablespoons butter
2 1/2 tablespoons flour
1 onion, sliced
1 garlic clove, roughly minced
2 cups chicken or vegetable broth
2 cups milk
1 small head (about 2 1/2 cups) broccoli, chopped into bite size pieces
2 1/2 cups shredded cheddar cheese
1/4 teaspoon pepper
salt to taste
Method:
Over medium, heat melt butter in heavy bottom soup pot or dutch oven and saute onion until soft. Add garlic, cook for 1 minute longer. Then add flour, cook for 1 more minute. Whisk in chicken broth and milk. Reduce heat slightly and bring to a simmer, stirring frequently, until thickened slightly. Using a hand blender or food processor, blend milk mixture until smooth. Return to heat and add broccoli, simmer until broccoli is cooked through. Remove from heat then add pepper, cheese and salt to taste. Then enjoy by itself of with your favorite sandwich!
