Curried Chicken
This chicken curry is great, basic ingredients turned complex! I love curry cooked with coconut milk and all, but I don't always have that on hand. Using flour and milk will get you about the same thickness. I even used almond milk! You can add just about any kind of vegetable and some fruits (even nuts) to this dish, a common one being apple. I always use what I have on hand so there is no need to buy anything, it will taste great with what you have.
Ingredients:
2 tbsp oil
2 lbs chicken
1 medium onion, chopped
1-2 garlic cloves, minced
1 small vegetable of choice, this one uses zucchini, chopped
3 tbsp curry powder (yellow is mild, red is spicy)
3/4 cup white wine, or chicken broth
3/4 tsp salt
1 1/2 tbsp brown sugar
2 tbsp flour
1 cup milk
salt and pepper for seasoning
Instructions:
Heat oil in large skillet over medium-high heat, brown chicken. Remove from pan and set aside.
Reduce heat to medium, sautee onion till soft, add garlic and vegetable of choice and cook till soft.
Stir in curry powder, salt, sugar and wine. Return chicken to pan, reduce heat to medium low and simmer till chicken is cooked through. Remove chicken one last time. Stir in flour and milk, increase heat to medium and simmer until thickened. Return chicken, coat with sauce and serve over rice. Enjoy!
