Mediterranean Stuffed Peppers




4 medium or 6 small bell peppers
1 lb turkey burger 
1 medium onion, diced
1 clove garlic, minced 
1 medium eggplant, unpeeled and diced 
1 1/2 tbsp tomato paste
1 tsp basil 
1 tsp salt
1/2 tsp ground black pepper
1/2 cup dry white wine or chicken broth
1 cup brown rice, cooked
1/2 cup dried currants 
1-6 oz container feta cheese
Olive oil 

Par boil the peppers for 1-2 minutes, shock with cold water and set aside. 

Cook burger separately, drain and set aside.

 In large skillet over medium heat, saute onions till translucent.  Add eggplant and garlic, cook for 2 minutes longer.  Add tomato paste and precooked burger, cook for another minute, stir in wine/broth, currants, basil, salt and pepper. Cook till it reduces to almost no liquid, about 3 - 4 minutes.  Stir in rice last.  

Stuff peppers half way, add a tablespoon or more of feta fill the rest of the way with stuffing and top with more feta.  

Bake at 350 degrees for 30 minutes.
