Pumpkin Cookies with Cinnamon Cream Cheese Frosting
First things first; the cookies:
1 stick (1/2 cup) butter, softened
3/4 cup brown sugar
1 egg
1/2 cup pumpkin puree
1 teaspoon vanilla extract
1/2 cup maple syrup
1 1/2 cup flour
1/2 teaspoon baking powder
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
Preheat oven to 325.
Cream butter and brown sugar till fluffy.
Combine pumpkin, egg, vanilla and maple syrup and add to butter mixture with mixer on med speed mix for 30 or so seconds, scrape and mix for another 30 seconds.
Combine flour, baking powder, spices and salt. With mixer on low speed, slowly add flour mixture just until combine, scraping once in between.
Drop spoonful's on to ungreased baking sheets, bake for 15-17 minutes. Cool before frosting.
Now to the delicious frosting:
2 ounces softened cream cheese
1 tablespoon butter
1/4 teaspoon vanilla
3/4 cup powdered sugar
1 tablespoon milk
Beat cream cheese, butter and vanilla. Slowly add powdered sugar so to not make a mess! Add milk and beat until smooth. Spread generously over cookies and enjoy!
