Cinnamon Vanilla Shortbread Cookies
These shortbreads are thin, crisp and pair perfectly with some coffee or tea. Quick and easy to make as well.
1/2 cup butter, softened
1/2 cup brown sugar
3/4 cup flour
1/2 teaspoon vanilla extract
1/4 teaspoon cinnamon
With stand mixer or hand mixer cream butter and sugar on medium speed for 1-2 minutes, until light and fluffy. Add cinnamon and vanilla, beat for 1 minute more. Reduce speed slightly and slowly add flour, just still combined. Form into to a roll to the diameter of about 1 1/2 inches. Wrap with plastic and refrigerate for 20 - 30 minutes or until firm.
Preheat oven to 350 degrees. Slice cookies to 1/4 of an inch in thickness. Place on ungreased baking sheet 1 inch apart. Bake for 10 - 15 minutes, or until nicely browned. Cool on cookie sheet for 5 minutes, transfer to wire cooling rack and enjoy!
