Pub Style Mac & Cheese
The Super Bowl is coming up and this is perfect for game day! All the flavors of pub food in one dish.
Ingredients:
1 pound pasta
3 tablespoons butter
3 tablespoons flour
6 slices thick cut bacon
1 onion, sliced
2 garlic cloves, minced
3/4 cup semi-dark beer
2 cups milk
1 cup cream
1 tablespoon Worcestershire sauce
3/4 teaspoon dry mustard
3/4 teaspoon salt
1/4 teaspoon pepper
4 cups cheddar cheese, shredded
1 cup parmesan, shredded
1 cup crushed pretzels
Method:
Use a medium sauce pan. Cook bacon to a crisp, drain and set aside.
Preheat oven to 350 degrees.
Wipe out sauce pan used for bacon, return to a medium heat. Melt butter and sauté onions until soft and translucent. Add garlic to pan and cook for 30 seconds more. Stir in flour, cook for 1 minute. Whisk in beer, let thicken with flour, should be about 15 seconds. Then whisk in milk and cream, reduce heat slightly. Bring milk mixture to a simmer, stirring frequently, until thickened or coats spoon well. Should take about 10 minutes.
While sauce is cooking, cook and drain pasta. Chop bacon.
Once sauce is thickened, turn off heat and add Worcestershire sauce, mustard powder, salt, pepper and cheeses. Combine cheese sauce with pasta and chopped bacon then turn into a 2 quart baking dish. Top with crushed pretzels, give it a lightly spray with cooking oil. Bake for 20 - 25 minutes or until bubbly all around. Let cool slightly, serve and enjoy!
