Rosemary Lemon Chicken
Quick and easy chicken, can be marinated or bakes immediately. And as always, full of flavor!
2 pounds chicken
1/3 cup olive oil
1 lemon, quartered
3/4 teaspoon crushed rosemary
2 garlic cloves, finely minced
1/2 teaspoon salt
1/4 teaspoon pepper
Squeeze juice from lemons, save quarters for baking. Whisk together oil, juice, spices and garlic.
Trim and pat dry chicken. Place in plastic bag or Tupperware. If time permits, pour half marinade over chicken, let sit for 20 minutes in refrigerator.
Preheat oven the 350 degrees. Take chicken out of marinade and place in glass baking dish, top with rest of marinade and quartered lemons. Bake for 25 - 30 minutes, or until no longer pink.
