Crock Pot Citrus Ginger Pulled Pork



Ingredients:

2 - 2.5 lb boneless pork shoulder
2 limes, juiced
1 orange, zested and juiced
2 teaspoons fresh ginger, minced
2 garlic cloves, minced
2 tablespoons soy sauce
1 tablespoon hot sauce
3 tablespoons brown sugar
1/2 red onion, cut into 1/4 - 1/2 inch slices

Pat dry pork shoulder, season lightly with salt and pepper. Set aside.

Whisk together next 7 ingredients, until sugar is dissolved.

Layer onions on bottom of crock pot, place pork on top of onions and pour marinade over.  Cook on low 6 - 8 hours. Remove shoulder, shred and return to cooking juices.  Serve as sandwiches or tacos with a cool creamy slaw and enjoy!
