Maple Cheddar Apple Stuffed Chicken


This screams comfort meal, so savory and perfect with a side of sautéed greens, or sweet potatoes. Yum!

Ingredients:

4 boneless, skinless chicken breasts (about 2 - 2.5 lbs)
1 granny smith apple, peeled, cored, small diced
1 small onion, peeled, halved and sliced
1/2 cup maple syrup
1/4 teaspoon pepper
1/2 teaspoon salt
2 cups cheddar cheese, shredded
Salt & pepper for seasoning
1 tablespoon preferred cooking oil

Preheat oven to 350 degrees.

Pound out chicken breasts with meat mallet (or a rolling pin) between two sheets of saran wrap till they're about 1/4 inch in thickness, season both sides with salt and pepper.  Set aside.

In medium skillet over medium heat sauté onions in oil till soft, then add diced apples and cook for 2 - 3 minutes longer, add 1/4 teaspoon pepper and 1/2 teaspoon salt and maple syrup, simmer for a minute longer and removed from heat.

Now to build the rolls.  Lay pounded out and seasoned chicken breast flat and spread with 1/2 cup cheese in one even layer, then divide the onions and apples between the chicken in another even layer on top of the cheese.  Roll each chicken breast (not to tightly or you'll lose stuffing) and secure with toothpicks.  Place in lightly greased glass baking dish and bake for 30 - 35 minutes, or until no longer pink.
