Green Beans with Shallot White Wine Sauce



Ingredients:

1 - 12 ounce package fresh green beans
1 tablespoon butter
1 teaspoon olive oil
1 tablespoon flour
1 medium size shallot, sliced
2 cloves garlic, minced
1/4 cup white wine
1/4 cup chicken broth
1/2 teaspoon salt
1/4 teaspoon black pepper

Method:

Par boil green beans, 2-5 minutes or until tender, but still crisp.  Rinse with cold water to stop cooking.

In a medium skillet, heat butter and oil over medium heat and saute shallot until soft.  Add garlic, cook for 30 seconds then add flour, let cook for 30-45 seconds more.  Whisk in wine, chicken broth, salt and pepper, simmer until thick and coats spoon well. Add beans to reheat and serve.
