Bacon and Maple Carmelized Onion Pizza with Maple Balsamic Greens

 
This pizza was gone too fast.. Just the two of us ate the whole thing, because it was impossible to stop!  The onions are basically your sauce, so sweet and savory and the topping of greens really makes this a complete meal! You're going to love it.

1 premade pizza dough
1 large onion, sliced
2 tablespoons of butter
1 tablespoon olive oil
2 tablespoons pure maple syrup
6 slices bacon
1 cup shredded cheddar
3/4 cup shredded mozzarella
2 cups spring lettuce mix
2 tablespoons prepare maple balsamic Vinaigrette, recipe here!

Preheat oven to 450 degrees.  Roll out pizza dough place on prepared pizza stone, brush lightly with oil if desired.   

Cook bacon, chop and set aside. 

Heat oil and butter over medium heat, sauté onion until very soft and translucent. Don't hesitate to drop in a splash of water if the onions start to burn, it will stop it, but make sure all water has cooked away before next step. 

Add the maple syrup, sauté for 30 seconds more.  Spread across crust, sprinkle with bacon then cheese. 

Bake for 10 - 15 minutes, or until desired doneness.  Let cool for 10 minutes or so.  Toss your greens with the dressing and top pizza just before slicing.  And of course enjoy!
